MEDITERRANEAN TUNA SALAD

Ingredients

  • Canned tuna in oil (5 Oz)
  • 2 cherry tomatoes
  • 1 carrot (grated)
  • 1 small size onion (cut into rings)
  • 1/8 cup walnut broken into small pieces
  • 6-7 leaves of purple lettuce, arugula
  • A few parsley and mint
  • 3 tbsp. olive oil
  • 1 tbsp. lemon juice (freshly squeezed)
  • 1/2 tsp. pink Himalayan salt

Instructions

  1. Cut the veggies in the size you want
  2. Mix all the veggies in a bowl
  3. Drain the tuna and add into the bowl
  4. Finally add olive oil, lemon juice and salt
